A financiers, or financier, is a small French almond cake that is popular in pastry shops and cafes. The cake is typically made with ground almonds, egg whites, sugar, and butter, and has a dense, moist texture with a crisp exterior. The name "financier" is said to come from the fact that the cakes were originally created by French pastry chefs who were located in the financial district of Paris, and the small rectangular shape of the cake is said to resemble a bar of gold. Financiers are often served as a sweet snack or dessert, and are commonly enjoyed with coffee or tea.
